Mexican Popper Pull-Apart Bread

The on going struggle of deciding on which crisps or what breads go with what dips, is real. Well, believe me you need not look any further than this amazing, cheesy all-in-one recipe. It is a fast, “put-together-and-bake” starter that is perfect for barbecues or parties.

  • one large loaf of bread (any loaf with a hard crust like sourdough or french loaf is perfect)
  • one large tub of plain cream cheese
  • 20 or so finger length (thin slices) sticks of strong cheddar
  • 4-5 Jalepenos (depending on the intensity of the chillis and how hot you want the bread to be)
  • pack of bacon, cooked until crispy
  • handful of fresh coriander (cilantro)
  1. Preheat the oven to 190C.
  2. Cut diamond shapes into the loaf by cutting diagonally one way along the loaf and then again in the opposite diagonal way. Make sure to stop cutting before you hit the base of the loaf or else it will all fall apart.
  3. Chop up the jalepenos and through them into a microwavable bowl, followed by the cream cheese. Place the bowl into microwave and heat for 45-50 seconds until the cream cheese is soft. (I like to put the chilis and cream cheese together in the microwave because the cream cheese will then take on some of the chilli flavour)
  4. Chop up the crispy bacon and the coriander and stir into the cream cheese.
  5. Part the valleys that you made in the bread and spread the cream cheese mixture in. Don’t be shy with the mixture and make sure you get it everywhere and as deep into the bread as you can. Be warned: this is a sticky job! I tried to do this with a knife and ended up abandoning the knife and using my fingers.
  6. Once your bread is glued together with the cream cheese filling, place the cheddar sticks in the bread. This forms a delicious cheesy crust on top of the bread, so don’t push the sticks too deep.
  7. Wrap the bread in some tin foil and place in the oven for 20 minutes.
  8. Open the tin foil and bake for a further 5-7 minutes until the cheddar starts to crisp.
  9. Serve and enjoy! Be careful, this bread is a carb bomb that is TOTALLY addictive!!
